I'm not against carbs, at all, but as I do carb cycling, the days I eat low carb tend to be a little bit boring, so I decided to create a pancake recipe vegan plant based and extremely delicious that works perfectly for those low carb days, or any day!
Ingredients:
1/4 cup almond flour
1 scoop of low carb protein powder (I used @gardenoflife raw organic)
3 tbsp flax seeds
1 tbsp chia seeds (optional)
1 tbsp hemp seeds
1 tsp baking powder
1 tsp maca powder (optional)
2-3 packages of monk fruit (o.8 g each one) you can use stevia as well
2 tbsp coconut flakes (optional)
1 1/2 cup plant based milk (I used my homemade organic cashew milk)
2 tablespoons of vegan cream cheese
1 tbsp of your favorite nut butter ( use a low carb, preferably raw)
1-2 tbsp vanilla extract
Procedure:
To make the flax egg: Mix 2 tbsp of flax-seed meal with 8 tbsp of warm water and let stand for 5 minutes.
Meanwhile, add the rest of the ingredients to a food processor and mix everything together (you can use a hand mixer).
Add the flax egg to the rest of the ingredients and combine (using the food processor or by hand).
In a nonstick pan add 1/4 tsp of coconut oil, and with a measuring cup or spoon add the dough to the pan (I used the 1/4 cup measure for each pancake).
Cook for 2-3 minutes to medium heat for both sides. Repeat.
Servings: 5 - 6 pancakes.
Toppings I used vegan butter, frozen blueberries, more coconut flakes, and sugar free maple syrup.
Generally, berries🍓 are low in carbs so you can use any of your choice.
